Description
Grains of paradise are the seeds of Aframomum melegueta, a West African relative of cardamom, also sold as alligator pepper or melegueta pepper. Ours are whole seeds grown in Nigeria. The flavour is peppery and warm with a citrus edge and a faint cardamom note, so they stand in well for black pepper in stews, marinades and spice rubs, in West and North African cooking, and in mulled drinks and craft brewing. Crush them fresh in a mortar or mill just before use, as the aroma fades quickly once ground. Store in a cool, dry cupboard away from direct light.
